Ingredients You’ll Need
You don’t need a fancy kitchen setup for this just the classics:
- 250g fresh green chillies (medium size, not too spicy)
- 2 tbsp mustard seeds (rai dana)
- 1 tbsp fennel seeds (saunf)
- 1 tsp fenugreek seeds (methi dana)
- 1 tsp turmeric powder
- 1 tsp red chilli powder (optional, if you like it extra spicy)
- 1 cup mustard oil
- Salt to taste
- 2 tbsp lemon juice (for that tangy punch)
Step-by-Step Recipe
Step 1: Prep Time
Wash those chillies nicely and dry them completely. (Tip: Don’t skip drying even a drop of water can spoil your pickle later!)
Cut each chilli in half vertically, but not all the way through just enough to stuff the spices.
Step 2: Spice Mix Magic
In a pan, lightly roast rai dana, methi dana, and saunf for 1–2 minutes.
Crush them roughly not into powder, just a bit coarse.
Now mix them with turmeric, salt, and red chilli powder.

Let it sit for 3–4 days in sunlight shake the jar daily so everything mixes well.
